Here are the general steps to make fried snack food by twin screw extruder:
Preparation of raw materials
- Select main raw materials like corn flour, wheat flour, and potato starch. Add seasonings such as salt, sugar, and flavorings according to taste.
- Mix the raw materials evenly and add an appropriate amount of water to form a dough with suitable softness.
Extrusion processing
- Preheat the twin screw extruder to the appropriate temperature, usually between 100°C and 180°C.
- Put the dough into the feeder of the extruder, and the twin screws rotate to push and knead the dough. The dough is extruded through the die at the end of the extruder to form the desired shape.
Cutting and shaping
- Use a cutter to cut the extruded snack food into appropriate lengths. Some extruders have built-in shaping devices to make the snacks have different shapes.
Drying
- Put the cut snacks in a dryer and dry them at 50°C to 60°C for 2 to 4 hours to reduce the moisture content to about 10%.
Frying
- Heat the oil in the frying pan to 160°C to 180°C. Put the dried snacks into the oil pan and fry until the surface is golden brown, which usually takes 1 to 3 minutes.
- Remove the fried snacks from the oil pan and drain the oil.
Seasoning
- Spray seasonings evenly on the surface of the fried snacks according to different flavors. Then package them for storage and sale.
